What a nang actually is
A nang is a small steel cartridge — or, increasingly, a larger refillable tank — filled with food-grade nitrous oxide. Chefs have used them since the 1930s and the physics hasn’t changed. Charge cream in a dispenser and the gas dissolves under pressure. Release it and the cream expands to about four times its volume, and it holds in the fridge for a week instead of collapsing in two hours.
